Orosimo Sauvignon Blanc

The well-travelled Sauvignon Blanc grape variety, finds in the vineyard of Nemea, the ideal conditions to show off its talents. The old vineyard we cultivate at 800m. altitude in Asprokambos gives us a high quality white wine with great aging potential.

The grapes are hand-harvested in small crates and transferred to the winery's cooling chamber for 12 hours. This is followed by destemming and pre-fermentation cold maceration in an inert environment. Alcoholic fermentation takes place with controlled temperature variations to enhance the varietal aromas. After the completion of alcoholic fermentation, part of the wine remains in the tank with periodic stirring of the lees (battonage) for several months, while the rest matures in clay amphorae.

The color is transparent lemon-green with very intense aromas of exotic ripe fruits such as mango and passion fruit, melon, as well as hints of grass, lemongrass, butter, and vanilla. The palate appears rich and full with aromas that follow those of the nose, exhibiting exceptional balance and the nervy character of acidity in its evolution. It has a long aromatic aftertaste with an elegant finish.

Its strong and complete personality allows it to accompany a wide range of dishes. Among them shellfish and seafood with white sauces, fatty fish, semi-hard aged or smoked cheeses.
