Elysian

Produced by the great French variety Syrah, which we cultivate at 800m. altitude in Asprokampos of Nemea.

After being harvested, the grapes are chilled for 24 hours in a refrigerated chamber and then transferred directly to the press the following day without crushing or extraction. Subsequently, the winemaking process takes place in stainless steel, temperature-controlled tanks at 18°C. A portion of the wine remains on its lees, gaining structure and body.

After receipt, the grapes are refrigerated for 24 hours in a cold room and the next day they are taken directly to the press without extraction. The vinification is then unfolded in stainless steel refrigerated tanks at 18 ° C. Part of the wine matures in 2nd use oak barrels, while the rest remains with its wine sludge gaining in structure and body.

The color is bright pink - salmon. The nose is dominated by very strong aromas of red fruits such as cherry, strawberry, pomegranate and pink grapefruit. White flowers, roses and forest fruits. In the mouth it is rich, full of freshness and nerve with very good acidity and balance. It has a long and intensely aromatic aftertaste.
